A Night in One of the Oldest Cities in the World

Enjoy breakfast at the hotel restaurant before you head off for the day. If you have time, I recommend walking around the Likani area, as it is a beautiful part of the town.

Before you leave Borjomi, you will visit the local museum. Here you can learn about the bottling process of the natural spring water and how it has become an important drink across Georgia and many surrounding countries. You will see how the development of bottling has changed throughout generations and how Borjomi works today.

Surami Fortress is located on the Likhi Range, which divides Georgia into West and East. Because of its geographical significance, the area is known to have been settled since the Bronze Age and became heavily fortified in the 12th Century.
The fortress holds much mystery and has its own legend of a son being buried alive in the fortress walls, the story of which is told in the movie The Legend of Surami Fortress. It is possible to view the fortress from the surrounding areas.

After a morning full of learning and exploring, it is time for a little lunch stop. HB Rikoti is a little roadside restaurant that is great for a pit stop. It has a very elegant interior and serves a mix of Georgian and German cuisine. Make sure to try their khachapuri, as it is made daily, and their khinkali as it is some of the best in Georgia.

After a long day on the road, visit your hotel, check in and drop off your car, so you can explore Kutaisi by foot. Take a moment to freshen up and relax before you hit the town!

Take a wander through the city and visit the Royal District. You will see a lot of French influence here, which is remnants from the 19th century. There is a somewhat pleasant historic ambiance in the area, and it is particularly between the white bridge and Colchis Fountain. You will notice lots of street art and some newly renovated buildings.

Within the Royal District, you will see the Green Market Sculpture wall. This beautiful wall depicts figures and captures elements of Georgian culture.
Situated behind the walls is the market, which is worth a look as you get a feel for local produce and can have a peek into daily life in the city.
Please note that the market closes at 18:00.

Before dinner, why not head to a wine bar and try out some local specialties as an apéritif. Tina's Ethno Winehouse is one of the best places to try some Georgian wine. Georgia has some excellent wines, and the fermenting process is often traditionally done using clay pots. This process is unique to the region and a considerable part of Georgian culture.
I personally really enjoy Georgian red wines, but they do make white wines that are also delicious.

Papavero is one of the best restaurants in Kutaisi, and you will find their menu offers a wide variety of foods. It is primarily Georgian cuisine, but you will also see some fusion dishes where the chefs have been experimenting.
The restaurant is a good size and has a lovely outdoor seating area; however, if you visit on the weekend, make sure to book a table.
